Job Summary Oregon State University's Ship Operations unit within the College of Earth, Oceanic, and Atmospheric Sciences invites applications for future full-time (1.00 FTE), 12-month, hourly academic wage (as needed) Relief Chief Cook positions. Appointments are anticipated to last up to one year from appointment date. The purpose of the Chief Cook position is to provide support and leadership abilities for day-to-day operations of the Steward Department aboard R/V Taani, supervision and training of Steward Department personnel, and food preparation aboard the ship. This includes policy and process development that ensures safe food handling and cleaning techniques that meet requirements or recommendations established by the Oregon Health Authority, OSHA and other applicable federal and state agencies; ordering and procurement of provisions and supplies for each research cruise; assisting with budget development for the steward department; developing menus and recipes; and meeting established budgetary food cost goals. Key Responsibilities 60% - Galley Management & Operations Provides operational leadership abilities of the day-to-day functions of the galley and Steward Department including oversight of food production, menu development and implementation, inventory management and vendor communication and management; supervises the development and implementation of all menus & ensures recipes are developed; ensures high quality nutritious food, production, presentation, and flavor; Develops menus that address multiple dietary and allergen needs along with healthy cooking principals; Ensures that dishes have proper labels regarding allergens and dietary preference (e.g. vegan, Halal, gluten free). Serves as the primary point of contact for compliance with galley-related policies and procedures connected with Ship Operation's Safety Management System; Ensures the department's safety and sanitation goals are met or exceeded on a everyday basis. This includes ensuring everyday temperature logs are maintained accurately, staff are trained and following the established safety and sanitation policies, state and federal food handling and safety procedures are being followed and exceeded, everyday inspections are made to ensure all internal and exterior areas are clean and debris free. Provides hands on training or participates in everyday food preparation; Plans, develops, and revises procedures and practices to ensure efficient, effective workflow and quality standards Directs staff in the clean-up of the galley, mess room, storerooms, refrigerators, and freezers; assigns food preparation and cleaning tasks to staff; ensures dishes, utensils, and equipment are properly washed and are sanitary. Trains staff in food preparation, clean-up, linen supply, and steward supply functions. Promotes efficient use of time, equipment, technique and ingredients, function models cleanliness in personal appearance, hygiene, food handling, work areas and food storage. 20% - Supervision Trains, evaluates, and coaches galley staff; Disciplines and follows progressive discipline process as necessary. Reviews and approves staff timesheets for accuracy. 15% - Inventory and Purchasing Develops both the food budget for the year as well as a budget for other galley equipment and supplies. Estimates usage and supply requirements and places orders Purchases all food and supplies within the Steward Department budget; Receives, inspects, loads and stores foodstuffs required for three meals per day for voyages of 30 days and longer. Maintains stocks of linen and steward supplies. Performs inventories and records usage of items for use in determining future orders. Forecasts and purchases, or recommends purchase, of galley equipment. Drives personal, rental, and/or OSU Motor Pool vehicles to purchase and transport food and supplies. 5% - Other tasks Participates in fire, lifeboat, and other vessel safety drills. May be required to execute vessel safety and emergency tasks including fighting fires and providing First Aid. Actively participate in the coordination of department's response to emergency situations. Completes various projects assigned by the Ship's Master. Working Conditions / Work Schedule The employee in this position is required to work on board OSU operated research vessels at sea on research cruises that may last from one day to three weeks or more before returning to port, in ocean and weather conditions which are highly variable. The incumbent must not be incapacitated by sea-sickness. The capability to lift, carry, push, and pull objects weighing up to 40 pounds is required. Ship Operations is a seven day per week operation; therefore, weekend and holiday work may be required. Shift and/or work assignment may change located on operational needs. In the event of health risks to the working environment while at sea, Ship Operations may need to require quarantine periods and other health & safety requirements before employees join the vessel or begin work at sea to ensure continuity of business operations.
