Job Summary The Memorial Union is seeking a Global Community Chef de Cuisine. This is a full-time (1.00 FTE), 12-month, professional faculty position.

The Memorial Union (MU) is the campus student union and a department of the division of Student Affairs. The MU is geographically located in the middle of the campus and is considered the ?living room of campus?. The MU welcomes students, faculty, staff, visitors, and the local community to campus, and its mission is to provide learning practices and opportunities for personal growth in an open, inclusive, and resource-rich community where student and staff collaborate with a Student Advisory Board, who are influential to the character and scope of the department and provide the budget recommendations for the facilities the MU is charged with, services and programs. The MU provides community centered inclusive facilities and space that creates an environment for building significant relationships.

The position requires strong leadership abilities and communication skills and has a service focus to prosperously meet client and team expectations. The position will manage the day-to-day operations of the kitchen and serve events within the MU, its facilities and events on the Corvallis Campus. The position will provide subject matter skills on the planning and execution of a wide variety of events ensuring effective, efficient workflow, adherence to policy and standards and a high level of client satisfaction. The person in this position must be well-organized and able to keep work up to date and meet people easily and maintain composure during unplanned requests. This person will exemplify a expertise and appreciation of the intricacies of the collegiate calendar, understand the organizational culture within the institution, and understand the components of events such as vendor contracts, risk assessment, and day to day operations. The position will prosperously communicate, understand, and interact among persons with differing assumptions that may exist because of ethnic and cultural orientations. This position will require a flexible schedule located on the needs of the business.

The Memorial Union exists to develop students, create learning opportunities and provide quality facilities and services. The Event Manager will support the core purposes by delivering training to full time and student staff with varying skill sets and backgrounds.

-This position serves as the Chef de Cuisine in the Global Community Kitchen and works to create a teaching and learning environment for menu creation, culture, production, and service. The position manages has access to and use of a full commercial catering/teaching kitchen - The Global Community Kitchen (GCK) - to enhance campus programming and services. The manager maintains all equipment and ensures safety, sanitation, and compliance with all university, city, county, state, and federal food regulations for the more than 20,000 meals served annually through the program. This includes events ranging in size up to 2000 people served.
The Chef de Cuisine is charged with the supervision, teaching and development of a dedicated team in support of the program. The manager provides culinary skills to the team and clients and is responsible for all aspects of managing personnel, food production, and menu development for clients.

Key Responsibilities 50% - Global Community Kitchen Culinary Oversight and leadership abilities
   » Plan, develop, evaluate and implement culinary programs and services for the Global Community Kitchen.
   » Responsible for the everyday operational decisions of the unit and is responsible for developing programs located on business needs.
   » Creates a welcoming environment that invites people of all identities to work together and express identities and cultures through food.
   » Provides operational/culinary leadership abilities & support for the day-to-day functions of the entire kitchen including food production, volunteer training, menu development & implementation, recipe development, inventory management, and vendor communication and management, and event food service.
   » Plans, evaluates and revises procedures and practices to ensure efficient, effective workflow and quality standards.
   » Assign staff to monitor client cooking and food preparation.
   » Purchase food and supplies within the purchasing guidelines of OSU and Student practices & Engagement.
   » Ensure the kitchen's safety and sanitation goals are met and in compliance with applicable rules and regulations. This includes ensuring everyday temperature logs are maintained accurately, staff are trained and follow the established safety and sanitation policies, and everyday inspections are made to ensure all internal and exterior areas are clean and debris free. Kitchen has no critical violations on the biannual health department inspections.
   » function model and ensure cleanliness in personal appearance, hygiene, food handling, work area and food storage.
   » Work with the kitchen clients in the development and scaling of recipes for catered events. Develop menus that meet multiple dietary, and allergen needs along with using healthy cooking principles.
   » Ensure all prepared food and beverages are of high quality, meet food cost expectations and meet the vision of clients;
   » Facilitate everyday & weekly culinary and upcoming event coordination & planning meetings with student organizations and other clients.
   » Facilitate and evaluate culinary trainings for kitchen volunteers

25% - Supervision & Teaching
   » Hire, train, supervise, evaluate, discipline and coach employees.
   » Schedule employees according to business needs.
   » Provide leadership abilities, training, mentoring, coaching, and advising to all employees. Works with all staff to identify their career goals and provide guidance on how they can achieve them.
   » Evaluate staff on an continuing basis and provide.
   » Meet one-on-one with each staff member to provide performance feedback.
   » Complete annual performance evaluation, provide professional goals and update position descriptions.
   » Follow progressive discipline as necessary and in conformity with Human Resources best practices.
   » Ensure staff are in proper uniform and appearance.
   » Develop and implement training programs that set culinary expectations and instruct employees on cooking, food handling, safety, sanitation, customer service and other areas as needed;

20% Program Administration:
   » Manage food costs, labor costs, and reservation pricing for the Global Community Kitchen.
   » Submit invoices for accounts payable and accounts receivable in a timely manner.
   » Represent the kitchen in meetings with student organizations and campus partners.
   » Holds weekly meetings with employees to communicate changes, special menu needs and other coordination to ensure all events are executed to expectations. Involve other staff members from the Memorial Union or campus departments as needed.
   » Review all recipes for appropriate ingredients, methods, pricing, and food cost.
   » Enter recipes within the structured guidelines.
   » Forecast the kitchen's needs for small ware and equipment.
   » Complete monthly inventory. Manage and approve staff leave requests and timesheets.
   » Process payroll and prepare schedules for posting.
   » Contribute all significant information to employees and manager in a timely manner.
   » Seek assistance and logistical support for busy periods from other team members or campus departments.
   » Actively seek feedback and ideas from staff and customers.

5% - Additional tasks as Required
   » Attend Memorial Union Staff meetings.
   » May be required to assist in other areas of campus from time to time

What You Will Need
   » Bachelor's degree with a focus on culinary management or related area or an Associate degree, vocational or technical degree in Culinary Arts, completion of a certified culinary apprenticeship plus 2 years working as a Sous Chef or above, or 5 years of progressive work as a Lead/Head Chef in a hotel, institutional, or full-service restaurant equivalent.
   » A minimum of 3 years full time work practice with in a large commercial restaurant, hotel, catering operation, or institution demonstrating management and managery skills as well as excellent culinary skills
   » Demonstrated strong expertise in a variety of culinary skills, techniques and styles. E.g. practice in exhibition cooking, practice in various global cuisines. Must have strong expertise of the flow of food through the preparation process, presentation, and service.
   » Demonstrated practice working with diverse audiences, including individuals for whom English is not their primary language. creating spaces and/or services which are inclusive of and intentionally designed for minoritized people (people of color, LGBTQ+ students, students with disabilities, low-income, and first-generation students)
   » Demonstrated practice as a trainer with the capability to develop and implement programs that teach others, especially related to the dining service and/or hospitality field and make presentations for either informational or promotional programs.
   » Must have capability to work with, train, and influence food production, culinary staff, and service staff.
   » Demonstrated capability to relate well to individuals and groups with widely varying backgrounds, perspectives, education, and skills
   » Excellent oral, written, non-verbal communication, organizational and cooperation skills
   » Demonstrated capability to cooperate, follow instructions, and stay organized
   » Demonstrated passion for food and the food service industry
   » Demonstrated expertise of food allergens and special dietary needs
   » Basic working expertise of windows-located personal computer applications (e.g. Work Excel, e-mail)
   » Working expertise of SERV Safe principles; certification required within 90 days of employment
   » Must obtain an Oregon Food Handlers Certificate within 30 days of the hire date and maintain all over employment with OSU.

Working Conditions / Work Schedule
   » The Global Community Kitchen is available for reservation all over the week, so weekends, evenings, and occasional holiday work will be required.

   » The employee in this position will often be required to lift/carry/push/push/pull objects weighing up to 50 pounds.
   » Must have the capability to make quick decisions under stress.
   » Must have the capability to plan for the production, and the capability to interpret recipes from varied sources and be able to test, develop, and deliver quality food products to Dining Services customers.
   » This is a physically active job in an institutional kitchen environment. Incumbent will practice long working periods of standing on a hard floor; working with commercial kitchen equipment; fluctuation in workflow, temperature and noise level.
